APPLICATIONS
ASCORBIC ACID is a preservative that, when added to wine, oxidizes by consuming dissolved oxygen; thus it protects wine by preventing oxidation of aromatic compounds (preserving fruity aroma) and polyphenolic compounds.
ASCORBIC ACID prevents Fe(II) to Fe(III) oxidation, reasoning that it prevents blue cloudiness (blue cases), although because of its legal limit it assumes very limited treatment.
RECOMMENDED DOSAGES
10 to 100 g/hl, depending on the treatment to be made.
250 g/hl of ASCORBIC ACID is the maximum limit allowed in the EC.
MODE OF USE
Dissolve the ASCORBIC ACID in water, at a ratio of 1:10, stirring until any lumps have completely disappeared, then add to the mass being reassembled and homogenize properly.
STORAGE CONDITIONS
Unopened package: store in a cool (temperature below 25°C), dry and ventilated place.
Open package: close tightly and store as indicated above.
